- 1 tablespoon olive oil
- 1 pound bison meat, cubed
- 1 onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced

- 1 teaspoon chili powder

- 1/4 teaspoon paprika
- 1/4 teaspoon black pepper
- 1/4 teaspoon sea salt
- 1 (14.5 ounce) can diced tomatoes
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1/2 cup beef broth
Instructions
- Set the Instant Pot to the “saute” setting. Add the olive oil and bison meat cubes and cook until lightly browned. Add the onion, bell pepper, and garlic and cook until softened, about 5 minutes.
- Add the cumin, chili powder, oregano, paprika, black pepper, and salt and stir to combine.
- Add the tomatoes, black beans, kidney beans, and beef broth and stir to combine.
- Secure the lid on the Instant Pot and set the valve to “sealing”. Select the “manual” setting and set the timer for 15 minutes.
- When the timer is finished, allow the pressure to naturally release for 10 minutes before manually releasing the remaining pressure.
- Serve the chili with desired toppings and enjoy!
